Almost Perfect Pancakes

This is my go to recipe anytime pancakes are on the menu at our house. I’ve never really tried adding anything like blueberries to the batter but I’m sure it would be a great addition! Who needs boxed pancake mix when you can make these delicious pancakes that never disappoint!! :)

Preheat griddle and grease lightly(if pan has non-stick coating do not grease).

1 egg

2 Tbsps butter, melted

1 tsp vanilla extract

3/4 cup milk (add a extra tablespoon if batter is really think and not pourable)

2 Tbsps wheat germ & almost 1 cup of whole wheat flour (add wheat germ to one cup measuring cup and then top off with the flour)

1 tsp baking powder

2 Tbsps sugar

1/8 tsp salt

1 tsp cinnamon

Beat eggs, butter, milk and vanilla until well blended. Add wheat germ, flour, baking powder, sugar, salt and cinnamon to liquid ingredients and mix just enough to make a creamy batter. Some lumps are ok. Ladle the batter onto your hot griddle. Turn pancakes over when edges look dry and bubbles cover the top. Makes 8 or 9 pancakes and can easily be doubled.
